Ingredients:

• 450g venison sausages (from our farm shop)

• 1 tbsp olive oil

• 2 onions, sliced

• 2 garlic cloves, crushed

• 1 tbsp tomato purée

• 150ml red wine

• 300ml beef stock

• 1 bay leaf

• Salt and freshly ground black pepper

Instructions:

1. Brown the Sausages

In a large, heavy-based frying pan over medium heat. Brown the venison sausages evenly, then set aside.

2. Cook the Onions and Garlic

In the same pan, cook the sliced onions until softened and golden. Add the crushed garlic and cook for another minute.

3. Combine with Wine and Stock

Stir in the tomato purée, followed by the red wine, allowing it to reduce for a few minutes. Add the beef stock and bay leaf, and season with salt and pepper.

4. Braise the Sausages

Return the sausages to the pan, cover, and simmer gently for 45 minutes until the sausages are tender and the sauce has thickened.

5. Serve and Enjoy!
